GalaktobourekoChurrasco Taco Recipe

Kosher salt
Freshly ground black pepper
2 cups of you favorites prepared black beans
2 Poblano peppers, roasted, peeled and seeded, cut into thick julienne
Queso fresco, crumbled
Avocado crema, recipe follows
Cilantro leaves, for garnish
8 of your favorite flour torillas

Avocado crema:
1 avocado, peeled, pitted and chopped
Juice of 1 lime
3 tablespoons sour cream
1 tablespoon olive oil
1 cup roughly chopped cilantro
Salt to taste
Place all ingredients except for the salt in a processor and puree until smooth Season to taste with salt.


Season the churrasco heavily with salt and pepper. Cook on a grill to medium-rare or sear over medium-heat heat in a sauté pan for 2-3 on each side. Allow the meat to rest for a few minutes then slice as thinly as possible.

Meanwhile, heat the tortilla in a clean sauté pan over medium heat until warmed through. Add a generous scoop of black beans and top some slice churrasco, poblano peppers, queso fresco, avocado crema and cilantro leaves. print recipe
