Fried Green Tomatoes Fried Green Tomatoes

2 Green tomatoes, sliced ¼ inch thin
1 package Saltines, ground in a food processor until fine (resembling cornmeal)
3 cups Buttermilk
Oil for frying
Fresh Mozzarella
2 cups Mascarpone
Olive oil for drizzling
Balsamic vinegar for drizzling
Sea salt

Heat oil in a skillet over medium high heat or 350F.

Soak the tomatoes in buttermilk. Heat the oil in a sauté pan over medium high. Place the soaked green tomatoes into the saltine mixture, pressing down firmly to coat the tomatoes well on both sides. Fry the tomatoes on both sides until they are golden brown. Remove from the oil and place on a plate of cookie sheet lined with paper towels. Serve with your favorite mozzarella, drizzle with oil, balsamic and top with a little sea salt.
