Crispy Bok ChoyCrispy Bok Choy

Ingredients

1 pound baby bok choy, smallest available, cut in half (or ¼ if your bok choy is larger)
1 tablespoon olive oil for tossing
¼ teaspoon kosher salt
Pinch freshly ground black pepper
Soy Sauce, for dipping

Preheat your oven to 450 degrees. Prepare a sheet tray with a roasting rack. You can line the sheet tray with parchment paper for easy cleanup.

Toss the bok choy with the olive oil, salt and pepper. Arrange in a single layer on the roasting rack. Roast until lightly golden, about 8 minutes then turn the bok choy over and roast another 5-7 minutes.

Serve with soy sauce for dipping.
