At Café Don Pablo™ we feel that our coffee is the finest available. We use only the largest, most desirable Arabica beans, grown in nutrient-rich volcanic soil in the lush mountainous terrain of the world’s coffee growing regions. These are award-winning beans that were cultivated by skilled farmers whose methods, knowledge, and passion for coffee have been handed down from generation to generation since the very first seed was planted.

Cafe Don Pablo Coffee Rubbed Filet Migon Don Pablo Signature Blend
Rubbed Filet Mignon

Braising in flavorful ingredients is the secret to making lesser-known (and right-priced!) cuts of beef impressive. The beef can be cooked and shredded up to three days ahead and then gently reheated with a splash of water.

1 tablespoon of freshly ground Don Pablo Signature Blend coffee, finely ground
1 ½ teaspoons of kosher salt
1 ½ teaspoons of brown sugar
1 teaspoon of black pepper

In a bowl mix together all the ingredients for the coffee rub. Rub into your filet and allow to stand for 10 minutes. Heat 2 teaspoons of oil in a large sauté pan over high heat until smoking. Place the filet in the pan, and cook until a crust has formed, 2 minutes. Turn the steak over, reduce heat to medium and continue cooking to medium-rare doneness, about 6-7 minutes. Remove from the pan and let rest 5 minutes before serving.

6 egg yolks
4 tablespoons Cafe Don Pablo Signature Blend (finely ground)
8 oz (200g) soft brown sugar (light)
1 pint (500ml) milk
6 fl.oz (approx 185ml) very hot water

2) Strain the mixture to remove the coffee grounds. Mix in the sugar and egg yolks, then whisk until thick and pale.
3) Whisk in the milk and the coffee, then put the bowl over a saucepan of simmering (not boiling) water. Cook until the mixture is thick (ie. until it forms a layer on the back of a wooden spoon) being sure to stir it all the time.
4) Take the saucepan off the heat and place the bowl to one side to cool. When cool, transfer the mixture into an ice cream maker and follow the manufacturer's instructions. Serves 8.
