Kids QuinoaKids Quinoa Recipe

1 1/2 cups quinoa, cooked according to instructions on package
1/2 cup lowfat milk or chicken broth
1/4 cup tiny diced carrots
1/4 cup English or frozen peas
1/4 cup fresh corn kernels
1/2 cup organic American cheese or very mild cheddar, grated or chopped


Heat the milk or broth in a small saucepan. Add the carrots, peas and corn and cook for 2 to 3 minutes, add the quinoa. Remove from the heat, add the cheese, stirring until melted. Taste for salt and pepper.
