Brazilian Cheese Bread (Pao De Queijo)

Ingredients

1 cup whole milk
¼ cup vegetable oil
1 pound tapioca flour
1 ½ teaspoons salt
12 ounces grated cheddar cheese
1 cup grated parmesan cheese
2 eggs

 

Directions

Preheat your oven to 350 – 375 degrees. Line 2 baking sheets with parchment paper.

Heat the milk and vegetable oil just until hot. Remove from heat and let cool for a couple of minutes.

In a bowl, combine the tapioca flour and salt. Add the warm milk mixture to the bowl and mix together using a wooden spoon or rubber spatula. After stirring the milk in, use your hands to work the dough until no dry portions of tapioca flour remain. The dough will feel very dry at first but will start to come together after a few minutes of working it.

Whisk together the eggs and cheese. Add the egg and cheese mixture into the flour and continue working the dough working your hands. Once the dough comes together and is well mixed, use a cookie scooper to portion balls. Transfer scooped balls to the prepared baking sheet, arranging 2 inches apart. Bake for 25-30 minutes or until cooked through. These are best eaten warm. If you are serving the cheese bread later, warm in the oven for a few minutes before serving.
