Nuoc Nam

Ingredients

½ cup fish sauce, I love Three Crabs brand  

½ cup lime juice, freshly squeezed

½ cup water

1 disk palm sugar, grated on a Microplane (you need about 1/3 cup grated sugar)

2 garlic cloves, grated on a Microplane

1-2 Thai chilies, thinly sliced (depending on how much heat you would like)

 

Combine all ingredients in a bowl and whisk until the palm sugar melts. This is a great dipping sauce. We served it with a fresh salad of watercress, Florida avocado, fresh mint, cilantro and thinly shaved red onion.
