Steak Tacos
Ingredients:
1 pound skirt steak
For the marinade:
Juice from 1 orange
5 tablespoons adobe from canned chipotle peppers
½ teaspoon salt
½ - 1 teaspoon ground coriander
½ - 1 teaspoon ground cumin
1 tablespoon brown sugar
For the tacos:
Neutral oil, as needed
½ red onion, cut into thin strips (julienned)
Your favorite corn tortillas
White melting cheese, like mozzarella
½ bunch cilantro, roughly chopped
For serving:
Sour cream
Your favorite salsas
Cut the skirt steak in ¼ inch thick strips. Mix together all ingredients for the skirt steak marinade. Marinate the skirt steak overnight.
To make the tacos, remove the skirt steak from the marinade. Heat a drizzle of oil in a cast iron pan over medium-high heat. Cook the skirt steak and to your desired temperature, add the onions to the pan when you add the steak.
While the steak cooks, heat a few corn tortillas on a griddle or nonstick pan, top with a little mozzarella and let the cheese melt. Top the melted tortilla with the skirt steak and chopped cilantro. Serve with your favorite toppers like sour cream and salsa.
